Authentic
Late October early November marks the beginning of the olive harvest in Umbria. Days are spent placing netting below the antique olive trees, securing the heavy wooden ladders in the trees as the picking of the olives commences. Olives are then placed in baskets and are taken to the coop Oleificio for immediate pressing. Teverina Extra Virgin Olive Oil is sent to a lab for analysis to evaluate acidity levels, which should be below .8 % to qualify for Extra Virgin rating. "Teverina" EVOO falls well below the required .8%. and is considered "Ottima Qualita".
A festival is then held celebrating the new harvest ! |

Packaging & Use
Our Teverina brand is dated for freshness. At the completion of the first cold pressing, the Extra Virgin Olive Oil is considered "Olio Novello" or New Oil for a period of one week. This oil is typically tasted and consumed by the local farmers and those who are fortunate enough to have access to the New Harvest Oil. The Extra Virgin Olive Oil from the coop is then bottled and canned unfiltered. The bottles (500 ml) and cans (5 ltr) are dated with Harvest date, Best by date and Packaging code.
Typical usage of the ultimate oil should be within 18 months of harvest, but oil is still considered of good quality up to two years after. This high quality EVOO is typically used as a finishing oil. Drizzle on grilled fish, mix in with salad, roasted potato's, toasted bread, pasta, pizza and grilled vegetables. Store away from sunlight and heat. |
